Marry Me Chicken
The people tell me this dish is supposed to make someone wanna marry you & honestly, if I wasn’t already stuck with me, I’d def marry me! Just sayin’
Marry Me Chicken
Servings: 4
Ingredients
2Tbsps avocado oil
1lb chicken thighs, seasoned on each side with salt and pepper
1/2tsp sea salt
3 cloves garlic, minced
1/2c low-sodium chicken broth
1/2c homemade cashew milk
1/2c dairy-free or regular parmesan cheese
1/2c sun-dried tomatoes, chopped
1tsp dried oregano
1/4 - 1/2tsp red pepper flakes (adjust for heat preference)
2c spinach, chopped
8oz brown rice pasta or chickpea pasta (high protein)
Directions
Bring a medium sized pot of water with 1/4tsp sea salt to a boil. Once boiling, cook pasta 2 - 3 minutes less than box instructions (el dente).
Heat a large cast-iron skillet over medium heat & add avocado oil. Once hot, add chicken thighs. Cook on one side until browned, about 5 - 7 minutes. Flip & cooke for an additional 5 - 7 minutes on the other side, or until cooked to a minimum internal temperature of 165 degrees farenheit.
Once cooked through, remove chicken thighs from the pan.
Add chicken broth to your pan & scrape off any bits of chicken stuff to the pan. Once broth is hot, add garlic & saute until slightly browned, about 30 - 60 seconds.
Add the cashew milk & parmesan. Stir to combine & allow parmesan to melt.
Once melted, add the sun dried tomatoes. Stir to combine & simmer for 2 -3 minutes, stirring occasionally. Add the oregano & red pepper flakes. Stir to combine. Add the spinach & stir occasionally until spinach is wilted.
once the spinach is wilted, add the chicken thighs back to the pans, cover with sauce, and allow everything to simmer together for 2 - 3 minutes.
Add your pasta to a bowl, pour your chicken mixture over the top, & enjoy!
