Chunky Monkey Date Bites
These make the perfect psot-dinner sweet treat, or pre-workout snack. Not to mention dates are high in fiber so they’re a keeper for healthy digestion.
Eating these feel like I’m eating a mini candy bar and they were so easy to make, so why not try them for yourself?
Chunky Money Date Bites
Ingredients
8 dates, pits removed
1-2Tbsps peanut butter
1/4 banana, sliced into slivers
1c dark chocolate
1tsp coconut oil
sea salt to sprinkle
Directions
slice dates in half, the long way, being careful not to cut all the way through.
Smear peanut butter inside and place a banana sliver on the peanut butter. Close the dates. It’s okay if it doesn’t look perfect, We’re going to cover them in chocolate anyways ;)
Slice each date in half the short way making tiny chunks.
In a microwave safe bowl, combine the chocolate chips and coconut oil. Microwave, stirring occasionally and being careful not to burn, until the chocolate is completely melted.
Place parchment paper onto a plate.
One by one, drop each date bite into the chocolate until it’s completely coated in melted chocolate.
Place each chocolate dipped date onto the parchment lined plate and sprinkle lightly with sea salt.
Place in the freezer for 20-30 minutes, or until the chocolate has hardened.
Remove from the freezer, place in n airtight container, and store in the fridge for 5-7 days.
